The Lunch Lady, a Michelin Bib Gourmand awardee, brings the bold flavors of Saigon street food to life. Now expanding to the Philippines, we're looking for passionate talent to join us in delivering authentic flavors and exceptional hospitality.
The Chef de Cuisine is responsible for the overall management of kitchen operations, ensuring efficiency, profitability, and the consistent delivery of high-quality dishes. This role requires a strong leader who can balance administrative responsibilities with culinary excellence, while mentoring the team and driving innovation in Vietnamese cuisine.
Responsibilities
- Oversee kitchen administration including performance management.
- Manage inventory, ordering, vendor relations, and food cost controls.
- Lead recruitment, training, and development of kitchen staff.
- Direct daily kitchen operations to ensure smooth service and workflow.
- Maintain the highest standards of food quality, presentation, and consistency.
- Ensure compliance with all food safety, sanitation, and workplace regulations.
- Collaborate with ownership and management on menu development and strategic initiatives for operational efficiency and cost reduction.
- Foster a culture of teamwork, creativity, and excellence in the kitchen.
- Uphold The Lunch Lady's brand values, culture, and service excellence.
Qualifications
- Minimum 5 years of professional kitchen experience, with at least 2 in a leadership role in a high-volume restaurant.
- Strong background in Southeast Asian cuisine, with Vietnamese expertise highly preferred but not a requirement.
- Proven success in managing kitchen operations, including inventory, ordering, and cost control.
- Strong leadership skills with experience in hiring, training, and mentoring chefs.
- Exceptional organizational skills and ability to perform under pressure in high-volume environments.
- Passion for culinary innovation and outstanding guest experiences.
- Physical ability to lift up to 44 lbs and stand for extended periods.
