The Finance Manager is responsible for overseeing the financial health of Sbarro, ensuring profitability, cost control, and compliance. This role manages budgeting, financial reporting, cash flow, and strategic financial planning to support business growth and operational efficiency.

KRA 1. FINANCIAL PLANNING AND BUDGETING

- Develop annual budgets and forecasts in alignment with business goals.

- Analyze variances between budgeted vs. actual performance

- Monitor departmental spending (e.g., food costs, labor, marketing)

KPI:


Budget adherence rate (±5% variance)

Forecast accuracy (measured quarterly)

% reduction in unnecessary expenditures


KRA 2. COST CONTROL AND PROFITABILITY

  • Identify cost-saving opportunities (i.e food cost, labor)
  • Analyze food cost margins (COGS) per menu item
  • Optimize pricing strategies based on market trends and competitor benchmarks

KPI:


Gross profit margin improvement (YoY).

Food cost as % of sales

Labor cost as % of sales


KRA 3. FINANCIAL REPORTING & COMPLIANCE

  • Prepare monthly P&L, balance sheets, and cash flow statements
  • Ensure compliance with tax regulations
  • Coordinate with auditors for annual financial reviews

KPI:


Timeliness of financial reports

Zero penalties for tax/regulatory non-compliance.

Audit findings resolved within 30 days.


KRA 4. CASH FLOW & WORKING CAPITAL MANAGEMENT

  • Monitor daily cash flow and liquidity
  • Manage accounts payable/receivable to optimize payment cycles.
  • Oversee inventory financing and vendor payment terms.

Days Sales Outstanding (DSO)

Cash reserve coverage

Inventory turnover ratio


KRA 5. STRATEGIC FINANCIAL ANALYSIS

  • Evaluate ROI for new store openings, equipment, or marketing campaigns.
  • Conduct break-even analysis for new menu items.
  • Support franchise/franchisee financial modeling.

% revenue growth from strategic initiatives
