The Corporate Chef (Pastries & Sauces) is responsible for the development, standardization, and quality control of pastry products, desserts, and sauce formulations across all company operations. This role ensures consistency, innovation, food safety compliance, and cost efficiency while supporting production kitchens, outlets, and client requirements.
Key Responsibilities
Pastry & Dessert Development- Develop, test, and standardize pastry, dessert, and baked product recipes
- Create seasonal and signature dessert offerings aligned with brand standards and market trends
- Ensure consistency in taste, texture, appearance, and portion control
- Develop and standardize sauces, dressings, marinades, and bases for various food concepts
- Ensure flavor consistency and scalability for commissary and bulk production
- Improve shelf life, yield, and production efficiency of sauces
- Create standardized recipes, costing sheets, SOPs, and production manuals
- Establish portion control, plating guides, and storage procedures
- Ensure recipes are scalable from test kitchen to mass production
- Ensure compliance with food safety standards (HACCP, GMP, sanitation, and local regulations)
- Conduct regular quality checks, taste tests, and production audits
- Implement corrective actions to maintain product quality and safety
- Analyze food costs, yields, and wastage for pastries and sauces
- Work with Purchasing to source quality ingredients at optimal cost
- Recommend process improvements to enhance efficiency and profitability
- Provide technical and culinary support to commissaries, bakeries, and production kitchens
- Assist in production planning, equipment selection, and workflow optimization
- Support new product launches and operational rollouts
- Train chefs, bakers, and production staff on standardized pastry and sauce recipes
- Develop training materials, recipe manuals, and visual guides
- Coach teams to improve skills, consistency, and efficiency
- Lead R&D initiatives for new pastry items and sauce formulations
- Support Sales and Marketing through tastings, product demos, and presentations
- Customize products based on client specifications when needed
