Position Overview
The Commissary Staff supports food production for the company's food concept, ensuring that all menu items, ingredients, sauces, and components are prepared consistently and delivered fresh to stores. The role involves food preparation, cooking assistance, portioning, packaging, and maintaining strict sanitation and food safety standards.
Key Responsibilities:
Food Preparation & Cooking Support
- Prepare raw materials, ingredients, marinades, sauces, and menu components based on standard recipes.
- Assist in cooking, mixing, or assembling items required for daily store replenishment.
- Ensure exact measurements and consistency across all prepared items.
- Follow production schedules and recipe cards to maintain product quality and uniformity.
Food Handling & Safety
- Comply with food safety, and sanitation protocols at all times.
- Properly store ingredients according to temperature and shelf-life requirements.
- Use gloves, hairnets, and protective equipment during food handling.
- Immediately report any signs of contamination, spoilage, or product irregularities.
Portioning, Packaging & Labeling
- Portion and pack products according to store requirements and standard serving sizes.
- Label items with correct production date, expiry, batch number, and item code.
- Ensure that packaging is clean, sealed properly, and ready for dispatch.
Inventory & Production Monitoring
- Assist in receiving and checking deliveries of raw materials.
- Conduct proper stock rotation.
- Record daily production output and monitor ingredient consumption.
- Notify supervisors about low stock, shortages, or quality concerns.
Dispatch & Logistics Support
- Prepare completed orders for pickup or delivery to branches.
- Ensure accuracy of dispatch slips and quantity checks.
- Assist with loading/unloading of items if needed.
Cleanliness & Kitchen Standards
- Maintain cleanliness of prep areas, utensils, tools, and equipment.
- Sanitize workstations before and after each shift.
- Follow waste management and proper disposal guidelines.
Qualifications
- At least college undergraduate; TESDA or culinary-related training is a plus.
- Experience in a commissary or commercial kitchen is preferred.
- Knowledge of basic food preparation and kitchen safety.
- Must be physically able to lift, carry, and stand for long hours.
- Willing to work early morning shifts, rotational schedules, and overtime.
