Hygiene Officer

JOB SUMMARY

The Hygiene Officer is responsible for the overall implementation of sanitation and hygiene standards of the restaurant and the hotel. They are also responsible in ensuring that all food served to guests are free of microbiological and physical contamination, and that all work areas conform with the requirement set by the local health regulatory.

RESPONSIBILITIES

• Raise PR for non-stock and stock request and follow up on status
• Prepare request for payment forms related to FSMS / HACCP
• Liaise with vendor regarding food sampling schedule and reports
• Update all FSMS and HACCP manuals as required
• Monitor performance and attendance of management team members during training, meetings and conduct Food Safety self-audits as mandated by company and/or health regulatory
• Liaise with workforce training department all FSMS, HACCP-related training
• Prepare the weekly training reports to be submitted to the training department
• Prepare audit checklists for the group
• Compile all audit issues and release summary reports to all related departments
• Participate in all internal audits and to all SLIM FSMS audits
• Assist in conducting supplier audits and preparing audit reports
• Monitor the closure of all issues indicated in CARs (Corrective Action Reports)
• Assist the Executive Chef and Chief Steward in verifying the closure of CARs issues
• Remind concerned departments for any pending CARs

• Maintain and update the following files:

• Monthly FSMS / HACCP Team meeting minutes

• HACCP Management Review meeting minutes
• FSMS Guidelines and Policies
• Monthly food Safety Self Audit records
• FSMS / HACCP CCP records
• FSMS / HACCP Training records
• Monthly Food Lab test results
• Pest Control related reports and records
• Weekly Operation meeting minutes
• Daily F&B Service and Culinary briefing minutes

• FSMS / HACCP Internal audit reports

• Ensure security and upkeep of all confidential department files (e.g. AFBI reports, Lab Test reports, Disciplinary Action Memos, etc.) as directed

QUALIFICATIONS

• Graduate of a Bachelor's Degree in Food Science, Nutrition and Dietetics, Food Technology, or Food Microbiology
• Candidate must be a Food Safety Compliance Officer (FSCO)
• Has at least two (2) to three (3) years of working experience in the implementation of Food Safety and Quality Management systems in hotels, food retails or manufacturing sites
• Has knowledge in Food Safety and Quality System monitoring and auditing
• Knowledgeable in Best practices in Food Safety / Quality Management System
• ISO 22000 and ISO 9000, HACCP, SOP and SSOP knowledgeable
• Possesses excellent communication skills
• Experienced in project development and management
• Has strong presentation skills
• Highly effective in conducting training
• Able to build good working relationships and deal with different types of individual
• Capable of working and communicating effectively with a team
• Self-motivated, reliable, and able to deliver results with minimal supervision
• Organized and has great attention to details
• Proficient in office applications (GSuite, MS Office)
