JOB SUMMARY
The Pantry Chef (CDP – Garde Manger) is responsible for the preparation, presentation, and quality control of cold kitchen items, including appetizers, salads, and buffet cold dishes. This role ensures that all garde manger products meet established quality, hygiene, and presentation standards while supporting efficient kitchen operations and timely service.
KEY DUTIES AND RESPONSIBILITIES
Food Preparation and Production
- Prepare and produce cold kitchen items such as appetizers, salads, dressings, cold platters, and buffet items.
- Ensure consistency in taste, quality, portioning, and presentation of all garde manger dishes.
- Assist in menu execution and daily mise en place according to kitchen requirements.
- Set up and replenish cold buffet displays following established standards.
Quality Control and Standards
- Maintain high standards of food quality, freshness, and presentation at all times.
- Ensure compliance with HACCP, food safety, and sanitation guidelines.
- Monitor proper storage, labeling, and handling of ingredients and finished products.
- Minimize food wastage through proper portion control and inventory awareness.
Kitchen Operations and Coordination
- Work closely with other kitchen sections to ensure smooth and timely food service.
- Follow instructions from the Sous Chef or Executive Chef regarding daily production and specials.
- Assist in maintaining cleanliness and organization of the garde manger station.
- Adapt to menu changes, guest preferences, and operational needs as required.
Safety, Hygiene, and Cleanliness
- Maintain cleanliness of workstations, equipment, and cold storage areas.
- Ensure proper use and maintenance of kitchen tools and equipment.
- Follow all health, safety, and company policies at all times.
QUALIFICATIONS
- Education: College degree holder
- Course: HRM, Culinary Arts, or related course (Diploma acceptable)
- Experience: At least 2 years of experience as CDP – Pastry or related cold kitchen role
- Knowledgeable in Western and Asian appetizers
- Familiar with modern appetizer preparation and buffet set-up
- Knowledgeable in Middle Eastern appetizers is an advantage
- Familiar with HACCP guidelines
- Highly adaptable and able to work in a fast-paced kitchen environment
Job Type: Full-time
Pay: Php16, Php23,000.00 per month
