  • Inventory Management

  • Maintain accurate and up-to-date records of all incoming and outgoing commissary supplies.

  • Conduct daily, weekly, and monthly stock counts to reconcile physical inventory with system records.
  • Track usage of ingredients (flour, cheese, meats, sauces, etc.) and materials to avoid shortages or overstocking.
  • Monitor expiration dates and ensure proper rotation (FIFO – First In, First Out).

Receiving & Issuance

  • Inspect the received deliveries from suppliers, verifying the accuracy of quantity, quality, and documentation.
  • Report any damages and shortages with the deliveries received from suppliers.
  • Issue ingredients and supplies to commissary staff for dispatch according to production needs while maintaining proper documentation.

Reporting & Coordination

  • Prepare daily, weekly, and monthly inventory reports for the Commissary Head and Management.
  • Coordinate with the Commissary Head for timely ordering of materials based on stock levels.
  • Report discrepancies, damages, or shortages immediately.

Compliance

  • Ensure storage areas are organized, clean, and compliant with food safety and sanitation standards.
  • Follow standard operating procedures for handling and storing perishable items.
  • Assist in regular audits and inspections.
