I. Administrative Function

  • Develop and maintain an organization chart of the Dietary Service showing the responsibilities and authorities of all personnel.

  • Directs the preparation of food within an established production system following standardized recipes, preparation service methods, and food handling techniques to ensure quality standard.

  • Implements and evaluates preparation, cooking and apportioning of food for patients within the set of budget limitation.

  • Checks and coordinates with stock clerk regarding availability of food supplies.

  • Request purchases for food supplies.

  • Supervises dietary staff in maintaining cleanliness of the unit.

  • Shall delegate responsibilities and duties to competent subordinates.

II. Therapeutic Function

  • Record patients daily meal census.

  • Receive calls for food admission, change of diets and discharge.

  • Endorses patients who needs diet counselling and/or those who have revised diet computation.

  • Inquires the staff nurse on duty regarding incomplete entries and doubtful orders on the diet list.

  • Follow doctor's prescription regarding patients diet.

  • Update color coded tags for patient meal trays.

  • Tastes and check food if properly labeled before dishing out.

  • Supervise the male food service workers in the distribution and collection of trays and female food service worker in the preparation of tube feedings.

  • Checks proper storage of leftover foods.

  • Observes proper sanitation and safety procedures.

  • Sees to the proper care and upkeep of all dietary wares and issues replacements when needed.

  • Receives delivered goods in the absence of stock clerk.

  • Verify accuracy of diets served to patients.

  • Observe patients' acceptance of diets and make notations in appropriate forms.

  • Adapt and modify menus in accordance with the needs of patients for the maintenance or improvement of nutritional status, as well as evaluate food consumed and provides counselling in principles of nutrition.

  • Supervise the preparation of special diet food to ensure proper quantity, quality and accuracy of ingredients.

  • Makes ward rounds and give diet instruction to patients.

III. Clinical Function

  • Consults daily diet list and notes patients on therapeutic diets.

  • Makes tentative plan for nutritional program and prepares relevant materials.

  • Reads the patient charts in the nurse station before seeing the patient.
