Food Operations Manager

Summary:

The Food Operations Manager to oversee the operations of our duck dressing plant and food commissary. This role is critical in ensuring high standards in food processing, research and development, compliance, and safety. The ideal candidate will have experience in food manufacturing, quality assurance, and regulatory compliance, with a focus on optimizing efficiency while maintaining superior product quality.

Key Responsibilities:

Duck Dressing Plant & Food Commissary Operations

 Oversee the daily operations of the duck dressing plant, ensuring efficient slaughtering,

processing, and packaging.

 Manage the food commissary, ensuring proper storage, preparation, and distribution of food products to retail outlets.

 Develop and enforce standard operating procedures (SOPs) for food handling, processing, and storage.

 Coordinate with suppliers and vendors to ensure a steady supply of raw materials and

ingredients.

Quality Assurance & Food Safety

 Implement and maintain HACCP, GMP, and other food safety protocols to ensure compliance with local and international food regulations.

 Conduct regular inspections, audits, and quality control checks throughout the production process.

 Ensure that all equipment and facilities are properly sanitized and maintained to prevent

contamination.

 Train staff on food safety, hygiene, and proper handling techniques.

Research & Product Development

 Collaborate with the R&D team to develop new duck-based food products and improve existing recipes.

 Conduct research on industry trends, consumer preferences, and innovative food processing techniques.

 Test and refine formulations, ensuring consistency in taste, texture, and overall quality.

Regulatory Compliance & Documentation

 Ensure compliance with FDA, NMIS, and other food industry regulations regarding food

processing, labeling, and distribution.

 Prepare and maintain proper documentation, reports, and certifications required for legal

compliance.

 Work closely with government agencies and auditors to ensure seamless inspections and

approvals.

Staff Management & Training

 Supervise plant and commissary employees, ensuring high levels of productivity and

adherence to safety standards.

 Develop training programs for workers to enhance their knowledge of food safety, processing techniques, and operational efficiency.

 Foster a culture of accountability, teamwork, and continuous improvement.

Process Optimization & Cost Control

 Monitor production efficiency, minimizing waste and improving resource utilization.

 Analyze costs and implement strategies to enhance profitability without compromising quality.

 Evaluate and recommend new technologies and automation systems to improve operational

efficiency.

Qualifications:

 Bachelor's degree in Food Science, Food Technology, Food Engineering, or a related field.

 5+ years of experience in food manufacturing, poultry/meat processing, or commissary

operations.

 Strong understanding of food safety standards (HACCP, GMP, ISO, FDA, NMIS regulations).

 Proven experience in quality assurance, compliance, and research & development.

 Knowledge of food processing equipment, production planning, and inventory management.

 Excellent leadership, problem-solving, and organizational skills.

 Ability to work in a fast-paced environment and manage multiple priorities.
