The commissary manager is responsible for supervising the daily operations of the commissary, guaranteeing the preparation, storage, and delivery of all products to the highest quality standards. This role is critical in maintaining consistency, efficiency, and food safety across all outlets.

Key Responsibilities:

  • Manage the daily operations of the commissary, including production, storage, and distribution of ingredients and finished products.
  • Supervise, train, and mentor commissary staff to ensure productivity, quality, and compliance with company standards.
  • Maintain strict adherence to food safety, hygiene, and sanitation standards.
  • Plan and coordinate production schedules to meet store demand while minimizing waste.
  • Oversee inventory management, including ordering, receiving, and tracking raw materials and packaging.
  • Implement and monitor quality control procedures to ensure product consistency.
  • Coordinate with Purchasing and Operations teams to forecast demand and optimize production planning.
  • Prepare reports on production, inventory, and staff performance for management review.
  • Identify areas for process improvement to increase efficiency and reduce costs.
  • Ensure compliance with local regulations and internal policies.
