Job Description:

The role of Catering Compliance Specialist is to assist in the planning, designing, implementing and maintaining compliance and audit programs, policies and procedures that will ensure adequate control and compliance by in-flight catering and in-flight sales service providers and/or suppliers of service agreements, standards, applicable local and international regulations. Audit programs include food provisioning, food safety, inventory, catering specifications stand, and aircraft servicing standards.

This includes identifying and assessing areas of compliance risk by service providers, overseeing and following-up on investigations and other issues generated by the compliance program, conducting flight food audits to ensure compliance with food specification and standards as defined by PAL, and validating hygiene, sanitation and safety reports and conducting audits on training records of personnel, health records, HACCP and GMP compliance record, and operational hazard/safety event report.

Required Skills and Qualifications:
  • 4 year college degree with background in management or culinary arts, meal management, food safety management, quality assurance, and cost accounting.
  • At least 2-years experience in food theory and preparation, quality assurance, standards compliance functions (in institutional catering operations).
