Research And Development Assistant Manager

The Research & Development Assistant Manager plays a key role in supporting the development of innovative recipes and processes for our culinary offerings. This position involves overseeing the documentation and costing processes, assisting in batch trial runs (BTR), and managing the R&D calendar. The successful candidate will demonstrate strong leadership, project management skills, and a deep understanding of Japanese cuisine, with a focus on high-quality product development in the food industry.

Key Responsibilities:

  • Responsible for the initial documentation of recipes and processes, ensuring accurate and clear records are maintained for future reference.
  • Conduct initial costing of recipes, ensuring the proper margin and material specifications are considered for optimal product cost efficiency.
  • Assist in conducting batch trial runs (BTR) to validate product formulas and ensure that final products meet quality standards.
  • Support the technical transfer process to ensure that recipes and processes are successfully implemented for large-scale production.
  • Manage and update the R&D calendar, ensuring all product development timelines and projects are on track and meet deadlines.
  • Foster a collaborative working environment, leading by example and encouraging a "winning together" attitude within the R&D team and across departments.
  • Contribute to ongoing innovation by researching and testing new culinary techniques and trends, specifically focusing on Japanese cuisine.
  • Work closely with other departments such as marketing, procurement, and quality assurance to ensure that new products align with business objectives and customer expectations.

Job Qualifications:

  • College graduate, preferably in Hotel and Restaurant Management (HRM), Culinary Arts, or a related field.
  • At least 5 years of experience working in Japanese Cuisine in a professional kitchen environment.
  • Previous experience as an R&D Researcher or Kitchen Manager in a fast-paced culinary or FMCG setting.
  • Strong leadership skills with the ability to manage and motivate teams effectively.
  • Proficient in Microsoft Office and basic computer programs for documentation and data management.
  • Excellent project management and risk management capabilities to oversee multiple initiatives simultaneously.
  • Ability to innovate and improve culinary offerings with a focus on quality, efficiency, and market relevance.
  • A collaborative mindset and a strong belief in the "winning together" attitude, promoting teamwork and shared success within the company.
