Functional Job Responsibilities

Function 1

Maintains all recipesIn charge and projecting food order of a section chosen by the Chef de Cuisine of the outlet In charge of a small outlet that serves a limited menu specializing in Chinese Cuisine

Function 2

Supervises and guides the commis according to the standard set by Chef de CuisineAssists in developing the culinary teamSupervises and guides Junior kitchen staff 

Function 3

Ensure wastage and spoilage is minimizedActively supports hygiene and HACCP programs by following Solaire IFSS standardsEnsures maintenance of established standardsReports any broken equipment to Junior Sous Chef or Sous Chef
