PERFORMANCE MEASURES:

  • Ensure the proper procurement, preparation, processing, and documentation of new food, beverage, and alcohol, based from the standards set by Research and Development and TMG
  • Provide the manager accurate and complete data, reports, documentation, and inventory of food cost and approved product list.
  • Facilitate knowledge transfer and validate mastery of newly developed dishes, or components of recipe.
  • Procure ingredients through ordering from suppliers based on availability of stocks and making sure that the acquisition is on time and complete.
  • Maintain the cleanliness and orderliness of the test kitchen based on the standards set by Food Safety and Sanitation and TMG management.
  • Ensure the proper maintenance of tools and equipment used and under the accountability of the test kitchen.
  • Document, test, and evaluate products and processes involved in value engineering.
  • Train, coordinate, and create accurate materials for knowledge transfer on the results of assigned projects.
  • Transfer of learning on newly developed or existing recipe, menu, components and/or concepts with accuracy and completeness
  • Coordinate and assist with systems regarding process, structure, and/or systems improvement.
