JOB SUMMARY

The Commis Butcher assists in the preparation, portioning, and storage of all meat, poultry, and seafood items according to kitchen standards. Ensures proper sanitation, food safety, and quality to support smooth kitchen operations and consistent product delivery.

KEY RESPONSIBILITIES1. Food Preparation & Butchery

  • Assist in cutting, trimming, deboning, and portioning meat, poultry, and seafood based on menu requirements.
  • Maintain consistency in cuts, weight, and presentation.
  • Prepare marinated meats and pre-cut items as instructed by the Head Butcher.

2. Quality & Inventory

  • Check quality and freshness of all raw items upon receiving and before preparation.
  • Assist in proper labeling, dating, rotation (FIFO), and storage of all products.
  • Report low stock levels, spoilage, or quality concerns to supervisors.

3. Hygiene & Safety

  • Follow all food safety, hygiene, and sanitation standards at all times.
  • Maintain cleanliness of tools, equipment, and workstation.
  • Properly handle and store knives and butchery equipment.

4. Kitchen Support

  • Assist in preparing mise en place for daily operations and banquets.
  • Coordinate with other kitchen sections to support menu execution.
  • Ensure timely preparation of items during service.

QUALIFICATIONS & EXPERIENCE

  • At least 1 year experience as a Commis Butcher or similar role preferred.
  • Basic knowledge of meat and seafood cuts, handling, and storage.
  • Ability to work in a fast-paced kitchen environment.
  • Physically fit; comfortable with lifting and cold-room work.

Job Types: Full-time, Permanent

Pay: Php13, Php13,500.00 per month
