Job Purpose

Meat Preparation/ Hotdog Production line QA Inspector

  1. Timely reporting of issues and concerns encountered that may affect food safety and quality.

  2. Conduct GMP, Pre and Post Sanitation of meat chiller, and spice room, production/hotdog and Siomai line as well as the personnel.

  3. Meat Preparation:

a. Verification of calibration of metal detector which must be monitored every start-up, after break time and every change of product.

b. Verification of temperature of meat blocks, sow meat, fats and other raw meat materials before use.

c. Verification of quality, label, batch weight of raw meat to be use for traceability.

  1. Meat chiller:

a. Check the condition of raw meat materials stored at meat chiller.

b. Verification of temperature.

  1. Hotdog Line:

a. Verification of batch weight of prepared ingredients (every 3rd batch).

b. Randomly verify the temperature (using calibrated thermometer) of emulsion after the bowl chopping process.

c. Verification of stuffing weight and size per SKU by random checking of strand based on standards weight and size.

  1. Reports to QA Supervisor.

Chinese Deli/ Cooked Meat/ Native Deli Line QA Inspector

  1. Timely reporting of issues and concerns encountered that may affect food safety and quality.

  2. Random verification of temperature, quality and traceability codes of raw meats at meat preparation area.

  3. Verification of batch weight of prepared ingredients and raw meat (every 3rd batch).

  4. Verify brand/ weight (using calibrated weighing scale) of meat raw materials based on standards specs and weight.

  5. Monitor mixing/tumbling per SKU according to set parameters.

  6. Randomly verify stuffing weight according to set standards.

  7. Randomly verify the temperature of mixed emulsion before and after mixing and curing.

  8. Monitor and verify the curing time per SKU based standards parameters.

  9. Monitoring stuffing weight per SKU.

  10. Monitor room temperature and disinfectant solution for hand dip, tool dip and foot bath for every two hours.

  11. Reports to QA Supervisor.

Smokehouse/Packaging line QA Inspector

  1. Timely reporting of issues and concerns encountered that may affect food safety and quality.

  1. Conduct GMP, Pre and Post Sanitation of smokehouse, hotdog chiller and raw/cooked packaging.

  2. Monitor the quality of all FG products and sanitation condition of hotdog chiller.

  3. Check and verify the settings indicated on smokehouse panel per SKU (every load) before loading and ongoing cooking based on standards.

  4. Verify the final internal temperature of the product per load in the smokehouse according set parameters.

  5. Check the temperature of chilled water use for showering of hotdog products.

  6. Check the internal temperature of the product per SKU after showering/cooling based on standards.

  7. Monitor the internal temperature of the product per SKU before link cutting/packing based on standards.

  8. Randomly verify weight and number of pieces per pack of the product per SKU based on standards.

  9. Check and verify label code per SKU.

  10. Check the strength seal of packed FG product.

  11. Randomly verify metal detection operation in FG per SKU.

  12. Monitor the layering of the FG product per SKU on trolleys for blasting.

  13. Check the temperature and standby time of the FG product at holding room before blasting.

  14. Reports to QA Supervisor.

Blast/Boxing/Dispatching QA Inspector

  1. Timely reporting of issues and concerns encountered that may affect food safety and quality.

  2. Blast Freezing

a. Hourly Monitoring of Blast Freezing Temperature.

b. Verification of Product temperature at the end of blast freezing cycle.

  1. Boxing

a. Check Label Code if it is correct based on actual product.

b. Randomly verify weight per box, per SKU.

  1. Dispatching

a. Check conformance of delivery van and personnel prior loading based on set standards.

b. Check required delivery van temperature based on standards prior loading.

c. Randomly verify label and product surface temperature of FG product to be dispatched.

  1. Reports to QA Supervisor.

    IMI Dry/ Raw Meat Materials QA Inspector

  2. Timely reporting of issues and concerns encountered that may affect food safety and quality.

  3. Check conformance of delivery van and personnel prior unloading based on set standards.

  4. Check COA if within the standards.

  5. Randomly check sample coming from 1st, med, last of delivery van based on AQL sampling plan.

  6. Responsible for the acceptance all incoming raw materials and packaging materials, ensure compliance to set standards.

  7. Coordinate to Quality Assurance Supervisor and concerned Departments for any nonconformities encountered during acceptance of raw materials and packaging materials.

  8. Encoding of data on Data base.

  9. Commitment and compliance in the food safety and quality policy of Foodcrafters Inc

  10. Reports to QA Supervisor.

    Qualifications:

 A Bachelor of Science graduate (Engineering courses, Chemistry, Food Technology, Microbiology)

 Two (2) to five (5) years of relevant experience in a similar position in the food industry sector-food manufacturing plant.
