About the role
As a Lechon Specialist at The Moment Group, you will be responsible for crafting the perfect roasted pork dish that is the cornerstone of Filipino cuisine. In this full-time role based in New Manila, Quezon City, Metro Manila, you will play a vital part in upholding the high standards and flavour profile that The Moment Group is renowned for.
What you'll be doing
- Expertly preparing whole roasted pigs, ensuring perfect crackling and moist, flavourful meat
- Overseeing the entire lechon cooking process from start to finish
- Mentoring and training junior staff on lechon preparation techniques
- Developing new lechon recipes and flavour profiles to delight customers
- Maintaining strict food safety and hygiene standards in the kitchen
- Collaborating with the culinary team to integrate lechon into innovative menu items
What we're looking for
- Proven experience as a lechon specialist, with a deep understanding of traditional lechon preparation techniques
- Excellent culinary skills and an exceptional palate to ensure consistently delicious lechon
- Strong leadership abilities to train and motivate a kitchen team
- Passion for Filipino cuisine and a commitment to preserving its cultural heritage
- Ability to work efficiently in a fast-paced, high-pressure kitchen environment
- Food safety certification and knowledge of relevant health and safety regulations
