Job Summary:
We are looking for an experienced and skilled Roasting Chef to manage the preparation, roasting, and presentation of high-quality roasted meats and related dishes. The ideal candidate has strong knowledge of traditional and modern roasting techniques, attention to flavor, texture, and appearance, and understands proper marination and timing processes. This role is critical to delivering consistently delicious, signature roast dishes.
Key Responsibilities:
- Prepare, marinate, and roast various meats such as:
- Chinese-style roasts (e.g., char siu, roast duck, crispy pork belly)
- Western-style roasts (e.g., beef, chicken, lamb, turkey)
- Or regional specialties, as applicable
- Operate and maintain roasting ovens, rotisseries, and other cooking equipment.
- Follow standard recipes, cooking procedures, and presentation guidelines.
- Monitor meat temperature, doneness, and resting times to ensure consistent quality.
- Manage preparation schedules for roasting to meet service timing and customer demand.
- Maintain high standards of food safety, cleanliness, and kitchen hygiene.
- Work closely with purchasing and kitchen management to ensure inventory levels are maintained and waste is minimized.
- Assist with new menu development or seasonal roasting specials.
- Supervise or train junior staff, if required.
Qualifications:
- 2-5 years of experience in a roasting chef or similar role.
- Strong understanding of roasting methods, marination, seasoning, and carving.
- Knowledge of food safety standards, HACCP procedures, and temperature controls.
- Able to work independently and as part of a team in a fast-paced kitchen.
- Excellent knife skills and meat handling knowledge.
- Familiarity with various types of roasting ovens and tools.
