KEY RESPONSIBILITIES

  • Lead and oversee overall commissary operations, including food production, scheduling, inventory, and manpower
  • Ensure product quality, standard recipes, portion control, and compliance with company standards
  • Enforce food safety, sanitation, and HACCP policies at all times
  • Supervise, train, and evaluate commissary staff; ensure proper staffing and productivity
  • Coordinate with Operations, Purchasing, and Logistics to support branch requirements
  • Monitor and control food cost, wastage, and operational expenses
  • Prepare operational reports and recommend improvements to increase efficiency and consistency

QUALIFICATIONS

  • Bachelor's Degree in Food Technology, Culinary Arts, Hotel & Restaurant Management, Business Management, or any related course
  • 3–5 years of relevant experience as a Commissary Head, Commissary Manager, Production Manager, or similar leadership role in the food business
  • Strong background in central kitchen operations, food safety standards, and inventory control
  • Proven leadership and people-management skills
  • Organized, detail-oriented, and able to thrive in a fast-paced environment
  • Flexible with work schedules as required by operations
  • Must be willing to be assigned in PASIG COMMISSARY
