Job Title: Head Chef

Location: Gordon Ramsay Fish & Chips and Street Burger, Mactan, Cebu

Reports to: Group Executive Chef / Group General Manager

Employment Type: Full-Time

Position Summary:

The Head Chef is responsible for leading the back-of-house operations for Gordon Ramsay Fish & Chips and Street Burger in Mactan, Cebu. This includes managing food preparation, ensuring consistency with brand recipes and standards, upholding food safety and cleanliness, and leading the kitchen team with a focus on quality, efficiency, and team morale. The Head Chef plays a crucial role in maintaining the Gordon Ramsay experience in every dish served.

Key Responsibilities:Culinary Execution & Quality Control:

  • Ensure all dishes are prepared and presented according to Gordon Ramsay brand standards.
  • Maintain exceptional food quality, taste, texture, temperature, and portion control.
  • Conduct regular taste checks and line inspections to uphold consistency and excellence.

Kitchen Management:

  • Supervise and schedule kitchen staff, ensuring proper coverage and workload distribution.
  • Train cooks and kitchen team members on recipe execution, hygiene standards, and kitchen efficiency.
  • Maintain cleanliness and organization of kitchen stations in compliance with food safety laws.

Inventory & Cost Management:

  • Monitor daily inventory levels and coordinate with the procurement team for accurate ordering.
  • Minimize food waste and control food costs through portion control, waste tracking, and proper storage.
  • Oversee receiving and proper storage of deliveries, ensuring FIFO and quality checks.

People Leadership:

  • Build a positive and respectful kitchen culture focused on teamwork, growth, and accountability.
  • Lead by example in discipline, work ethic, and commitment to standards.
  • Assist in hiring, onboarding, and evaluating kitchen staff in coordination with HR and GM.

Compliance & Safety:

  • Enforce strict food safety, sanitation, and hygiene protocols (e.g., HACCP standards).
  • Maintain all BOH documentation (temperature logs, cleaning schedules, health inspection readiness).
  • Ensure safe operation of all kitchen equipment; report maintenance needs promptly.

Collaboration:

  • Work closely with the General Manager and Executive Chef to roll out new dishes, specials, and seasonal menus (if applicable).
  • Participate in service line-ups and pre-shift briefings to align FOH and BOH teams.
  • Support training and development programs aligned with the Gordon Ramsay brand standards.

Qualifications:

  • At least 5 years of experience as a Head Chef or Sous Chef in a high-volume kitchen.
  • Strong knowledge of British and American casual food concepts (fish & chips, burgers, etc.).
  • Proven leadership in managing a culinary team in a fast-paced environment.
  • Strong understanding of kitchen operations, food costing, inventory, and hygiene standards.
  • Culinary degree or equivalent professional experience preferred.

Job Types: Full-time, Permanent, Fresh graduate

Pay: Php80, Php120,000.00 per month
