Job Title: Japanese Cook
Job Summary
The Japanese Cook is responsible for preparing, cooking, and presenting authentic Japanese dishes, ensuring high quality, consistency, and adherence to food safety standards. This role requires deep knowledge of Japanese culinary techniques, ingredients, and presentation styles to provide guests with an authentic dining experience.
Key Responsibilities
- Food Preparation & Cooking
- Prepare and cook a variety of Japanese dishes, such as sushi, sashimi, tempura, ramen, teppanyaki, and other traditional or fusion items.
- Select, wash, cut, and season ingredients according to traditional Japanese methods.
- Ensure proper rice preparation, including sushi rice seasoning and storage.
- Monitor cooking processes and adjust flavors, textures, and presentation as needed.
- Menu Execution & Creativity
- Follow standard recipes while maintaining authentic Japanese taste and presentation.
- Collaborate with the head chef or management to develop seasonal and specialty menus.
- Suggest improvements and creative dishes while respecting traditional techniques.
- Food Safety & Hygiene
- Maintain cleanliness and organization in the kitchen at all times.
- Store ingredients at appropriate temperatures and ensure freshness.
- Follow HACCP guidelines and other food safety regulations.
- Monitor and control food waste.
- Equipment & Inventory
- Properly use and maintain Japanese kitchen tools (e.g., sushi knives, bamboo mats, tempura fryers).
- Assist in ordering, receiving, and storing ingredients.
- Monitor stock levels and inform management of shortages.
Qualifications & Skills
- Proven experience as a Japanese cook or in a similar role.
- Knowledge of traditional Japanese cooking techniques, flavor profiles, and ingredient handling.
- Skills in sushi preparation, knife handling, and plating aesthetics.
- Understanding of kitchen safety and sanitation practices.
- Ability to work in a fast-paced environment and handle multiple orders.
- Strong attention to detail and commitment to quality.
- Good communication and teamwork skills.
Education & Experience
- Culinary diploma or equivalent experience in Japanese cuisine (preferred).
- At least 1–3 years of professional kitchen experience, with focus on Japanese dishes.
- Experience in a Japanese restaurant or hotel is an advantage.
