Job Title: Wine Sommelier
Department: Food & Beverage Operations
Reports To: Group General Manager/General Manager
Location: Gordon Ramsay Bar & Grill, Newport World Resorts, Philippines
Job Summary:
The Wine Sommelier is responsible for managing the restaurant's wine program, ensuring that every guest receives an exceptional dining and wine experience that aligns with the standards of Gordon Ramsay Restaurants. This role involves curating and maintaining a premium wine list, training service staff, pairing wines with the restaurant's menu offerings, and delivering expert wine service to guests. The Sommelier acts as the restaurant's wine ambassador—enhancing sales, upholding product knowledge, and fostering a culture of excellence in beverage service.
Key Responsibilities:
1. Wine Service & Guest Engagement
- Provide professional wine service to guests, including wine presentation, decanting, and pouring according to Gordon Ramsay Bar & Grill standards.
- Engage guests with confidence and warmth, offering tailored wine recommendations to complement their food choices and personal preferences.
- Handle guest inquiries regarding wine origins, vintages, varietals, and tasting profiles.
- Ensure every guest receives an elevated and memorable dining experience through thoughtful wine pairing and storytelling.
2. Wine List & Cellar Management
- Curate and maintain an updated and balanced wine list that complements the restaurant's cuisine and brand philosophy.
- Source, evaluate, and select wines in coordination with the General Manager and Corporate Beverage Director, ensuring alignment with brand and pricing standards.
- Manage wine inventory and cellar organization, ensuring optimal storage conditions for quality preservation.
- Conduct regular stock counts, monitor par levels, and report variances or losses.
- Oversee the proper receipt, labeling, and rotation of all wines.
3. Sales & Revenue Optimization
- Actively promote wine sales by upselling and introducing premium selections.
- Create and execute wine pairing menus, promotions, and tasting events to drive revenue.
- Analyze sales data and guest preferences to recommend pricing adjustments or assortment updates.
- Develop strategies to enhance wine profitability while maintaining quality and value.
4. Staff Training & Development
- Conduct regular wine training sessions for F&B service and bar teams to enhance knowledge and confidence in selling wines.
- Mentor and support team members in developing proper wine service etiquette, guest interaction, and pairing techniques.
- Ensure consistent service standards across all shifts.
5. Compliance & Brand Standards
- Ensure compliance with all licensing, hygiene, and safety regulations regarding alcohol service.
- Uphold the brand's standards of excellence, consistency, and guest care in all interactions.
- Represent the restaurant's beverage philosophy during media events, VIP visits, and brand activities as needed.
Qualifications:
- Certified Sommelier (WSET Level 2/3, Court of Master Sommeliers, or equivalent certification preferred).
- Minimum of 3–5 years of sommelier or wine service experience in a fine dining or luxury hotel environment.
- Strong knowledge of international wines, regions, grape varieties, and food pairings.
- Excellent guest engagement, communication, and presentation skills.
- Strong organizational and inventory management skills.
- Exceptional grooming, professionalism, and ability to perform under pressure.
- Flexible schedule, including weekends, evenings, and holidays.
Key Performance Indicators (KPIs):
- Wine Sales Growth: Achievement of monthly and quarterly wine revenue targets.
- Guest Satisfaction: Positive feedback scores related to wine service and overall dining experience.
- Inventory Accuracy: Minimal variance between actual and recorded stock.
- Staff Competence: Improvement in staff wine knowledge and sales confidence through training.
- Menu Alignment: Regular updates and alignment of wine list with menu changes and seasonal offerings.

Pay: Php40, Php60,000.00 per month
