About Us

Mana Mushroom Inc. is a fast-growing mushroom company supplying multiple restaurants, Robinsons supermarket branches, and expanding into consumer packaged goods. We cultivate premium oyster mushrooms from the highlands of Atok using natural, chemical-free methods and process them in our Baguio commissary.

We are now developing Mushroom Chicharon as one of our flagship value-added products and are seeking expert guidance in refining formulation, production workflow, and packaging suitable for commercial scale and FDA certification.

Role Overview

We are looking for a Food Technologist / Food Product Development Consultant with proven experience in developing mushroom-based products, ideally mushroom chicharon. Your role is to train our team hands-on for 3 days, focusing on:

  • Product formulation
  • Standardized cooking and processing workflow
  • Texture, crunch, oil management, moisture control
  • Scaling production using available equipment
  • Shelf-life improvement and testing basics
  • Packaging guidance (material selection, labeling, food safety)
  • Basic roadmap for FDA compliance for chicharon products

This is a training and systems-transfer contract, not a full-time role.

Qualifications

We strongly prefer candidates who meet the following:

  • Food Technologist, Food Scientist, or related profession
  • Has direct experience developing mushroom chicharon OR any crunchy/low-moisture fried snack product (e.g., chips, chicharron alternatives, dehydrated snacks)
  • Has experience handling or advising companies seeking FDA LTO/CPR, or at least working knowledge of required documents and processes
  • Has previously trained teams or set up production workflows
  • Willing to travel to Baguio City (housing allowance available)

Scope of the 3-Day Training

The exact structure will be finalized with you, but expected deliverables include:

Day 1:

– Audit of our current process, equipment, and raw materials

– Reformulation and trial runs

– Identifying gaps for commercial-grade stability

Day 2:

– Establishing SOPs (standard operating procedures)

– Techniques for crunch retention & moisture control

– Oil, breading, drying, and seasoning optimization

Day 3:

– Packaging guidance

– Basic shelf-life testing protocol

– Draft FDA compliance roadmap for product registration

– Team skills transfer & assessment

Compensation

  • Daily rate – open for negotiation (based on experience and scope)
  • Housing allowance for consultants traveling from outside Baguio
  • Transportation reimbursement available
