Key Responsibilities and Duties

1. Specialty Mixology and Menu Development (Niche Focus)

  • Innovate & Create: Research, develop, and test original cocktail recipes and non-alcoholic beverages utilizing purple rice, sticky rice, rice milk, and other uniquely Thai/Asian ingredients as core flavour profiles.
  • Recipe Management: Document and maintain precise, standardized recipes, preparation methods, and ingredient costings for all bar items to ensure consistency and profitability.
  • Pairing Expertise: Collaborate with the Head Chef and Management to recommend and execute cocktail pairings that complement the Thai cuisine menu.
  • Garnish Excellence: Ensure all drinks are garnished and presented to the highest aesthetic standard, consistent with the restaurant's sophisticated branding.

2. Bar Operations and Guest Experience (Core Bartending)

  • Service Excellence: Provide engaging, knowledgeable, and efficient beverage service, welcoming guests, assessing their needs, and making informed recommendations.
  • Compliance: Strictly adhere to all Philippine liquor laws, including checking IDs and practicing Responsible Service of Alcohol (RSA) at all times to ensure guest safety and legal compliance.
  • POS Management: Accurately process all beverage and bar food orders using the Point of Sale (POS) system and handle cash and card transactions with precision.
  • Set-up & Closing: Execute thorough bar opening and closing procedures, including mise en place, cleaning, and sanitizing all bar areas, equipment (blenders, shakers, draft systems), and glassware.

3. Inventory and Cost Control (Business Acumen)

  • Stock Management: Maintain optimal inventory levels of all liquor, beer, wine, mixers, garnishes, and specialty rice ingredients; conduct daily and weekly stock takes.
  • Waste Minimization: Monitor and control beverage cost, minimize waste, and track inventory discrepancies.
  • Ordering: Assist the Bar Manager in placing timely and accurate orders to ensure uninterrupted service flow.
