Food Administration Section:

(Regular Diet Area)

  • Forecast food supplies and order needed foodstuff for food production
  • Judge the quality of foods inspected
  • Apply possible ways of controlling food cost
  • Design a cycle menu for patient on special diet
  • Check the food prior to its distribution to the patient by supervising the dishing out of food
  • Supervises the preparation of regular and special diet foods to ensure proper quality, (palatability, appearance, and acceptability) and accuracy of ingredients used
  • Ensures that foods are maintained at proper temperature, keeping cooked items are covered at all times so that heat will not escape
  • Maintain sanitary standards in food handling and housekeeping

(Modified Diet Area)

  • Give Instruction to cook for special diet patients
  • Inform cook and kitchen aide with the kind vegetable allowed for certain diets like bland, soft, etc.
  • Inform staffs with the cuts and the kind of Meat, Fish, and Poultry for use in certain modified diets
  • Inform staffs with the cookery of therapeutic meals
  • Assist in counting and apportioning cooked dishes, supervise loading of apportioned dishes in the food conveyors

(Tube Feeding Section)

  • Apply the mechanics of tube feeding preparation from bottle collection, washing and sterilization, preparation of ingredients, tag making, actual preparation of TF formulas, apportioning of prepared formulas to individual containers to endorsement
  • Act calculation of a tube feeding prescriptions
  • Standard or regular tube feeding
  • Milk-free Tube feeding
  • Diabetic Tube feeding
  • Banana or Papaya base Tube feeding
  • And translate them into correct measure and food exchanges
  • Visit patients on Tube advice if necessary

(Food Production Section)

  • Shall plan, develop, implement and evaluate preparation, cooking, and apportioning of food for patients within the set budget limitations
  • Shall direct the preparations of food following standardized recipes, preparations, and service
  • Shall develop menu patterns and evaluate client acceptance
  • Shall maintain and improve high standards of sanitation, safety and accuracy
  • Shall analyze, develop and update job description and work schedule of the department personnel's
  • Shall recommend improvements for facilities and equipment
  • Shall participate in budget development and implementation of a system of cost procedure

(Food Service Section)

  • Shall keep organized records of meal, census of the cook's count for the patients' breakfast, lunch, dinner plus snacks for regular, therapeutic and osteorized feeding diets
  • Prepares diet guide, diet card for the dietary aides use
  • Supervised dietary staffs in the preparation of each meal
  • Receives diet orders, diet changes, and updated diet cards
  • Participates in dishing out and supervision of tray line
  • Escort the conveyor together with the staff crew
  • Counts and record out-going and in-coming equipment

(Nutritional Clinic)

  • Shall plan nutritional care of patients and formulate improved techniques and procedures in the preparation and servicing of regular and modified diets to patients and evaluate food consumed
  • Visit and provide counseling/instruction (patients and patients relatives), handouts and be able to reinforce dietary modification for patients' disease
  • Shall verify accuracy of diets served to patients and observed patient's acceptance of diets and make notation
  • Does the calculation of patients' caloric needs and diet prescription
  • Updates the nutritional Assessments and progress report card of each patient
  • Shall consult physician's concerning dietary prescription and implement them through meals
  • Shall participate in health team rounds and serve as a consultant on nutrition care

(Others)

  • Ensures all policies, rule and regulations are followed and implemented by subordinates
  • Monitors stocks, inventory, purchase limits and canteen expenses
  • Submit daily, weekly, monthly report of sales to the accounting department
  • Assigns duties to production workers and monitor's work completion according to set standards
  • Ensures proper maintenance of sanitary condition of the kitchen premises
  • Trains and re-trains production worker and molds them to be high performing individuals
  • Reports directly to the department head
  • Recommends measures to improve matters affecting operations
  • Supervises the canteen
