Job Summary:

We are seeking a highly skilled and experienced Senior Kitchen Operations Manager to join our team. As a key member of the culinary department, you will be responsible for overseeing the day-to-day operations of the kitchen, ensuring that everything runs smoothly during service.

The ideal candidate will have a strong background in culinary arts, with a minimum of 5 years of experience in a resort hotel environment. You will be expected to work closely with the Executive Chef to manage kitchen operations, supervise staff, and ensure the preparation and presentation of high-quality food.

Key Responsibilities:

  1. Manage kitchen operations, including food preparation, cooking, and presentation.
  2. Supervise kitchen staff and ensure proper execution of dishes during service.
  3. Oversee food preparation and ensure that dishes are prepared on time, following the restaurants standards.
  4. Ensure that food production stays organized and that all kitchen stations are working efficiently.
  5. Collaborate with the Executive Chef in creating and modifying the menu, offering suggestions based on seasonal ingredients, trends, and customer preferences.
  6. Help in creating new recipes, testing them, and ensuring consistency in their preparation and presentation.
  7. Assist the Executive Chef in managing inventory, ordering supplies, and controlling labor costs.
  8. Monitor and control food costs by ensuring that ingredients are used efficiently and waste is minimized.

Requirements:

  • Culinary degree or related experience of a minimum of 5 years in a resort hotel.
  • Institutional diploma or certification for specializations.
  • A minimum of 10 years' experience and at least 5 years international assignment.
  • Knowledge and familiarity of local cuisine will be an advantage.
