About the Job:
This role involves assisting the Executive Chef and Executive Sous Chef in overseeing the kitchen's operation, ensuring that all tasks are completed efficiently and effectively.
Responsibilities:
- Assist in supervising the kitchen's operation, ensuring that all tasks are completed according to established procedures.
- Collaborate with the Executive Sous Chef to manage equipment control and maintenance, public health rules and regulations, and training and reinforcement.
- Oversee the preparation of working schedules for cooks and stewards, submitting them to the Executive Sous Chef for approval.
- Monitor cooking staff's working hours, reporting any overtime to the Executive Chef for approval.
- Manage food production, including recording leftover covers and daily recaps compiled by CDPs.
- Coordinate the setup of food lines for personnel, ensuring a diverse range of options and adequate quantities.
- Supervise the breakdown of food lines, instructing staff on what food to keep and what to discard.
- Conduct daily inspections to ensure compliance with public health rules and regulations.
- Guarantee the effective implementation of the company's Food Safety program.
- Reports to: Executive Chef, Executive Sous Chef.
- Subordinates: CDPs, Commis, Stewards.
