Job Description
The Commissary/Warehouse Manager is responsible for overseeing the overall operations of the commissary and warehouse, ensuring efficient purchasing, food production, inventory management, storage, quality control, and timely distribution of products to restaurant units.
The role ensures that commissary operations meet food safety, quality, cost, productivity, and operational standards while maintaining an efficient supply chain. The Manager will lead the commissary team, coordinate with suppliers and internal departments, monitor inventory and costs, and ensure smooth day-to-day operations.
Key Responsibilities
Oversee the daily operations of the commissary and warehouse, including purchasing, production, storage, inventory, and distribution.
Manage the procurement of raw materials, ingredients, packaging, and other operational supplies.
Monitor inventory levels, stock movement, expiration dates, and product availability to prevent shortages and overstocking.
Ensure proper food production, preparation, handling, storage, and distribution in accordance with quality and food safety standards.
Ensure timely and accurate delivery of commissary products and supplies to all assigned restaurant units.
Monitor and control food, material, warehouse, and labor costs to support profitability and operational efficiency.
Coordinate with Purchasing, Operations, Finance, R&D, and restaurant units to ensure supply requirements are properly planned and fulfilled.
Develop and implement efficient inventory, warehousing, procurement, and logistics processes.
Conduct regular inventory checks and investigate discrepancies, wastage, damages, and variances.
Lead, train, and supervise the commissary and warehouse team, ensuring productivity and compliance with company policies.
Educate team members on proper equipment use, food safety, sanitation, storage, and handling procedures.
Coordinate with suppliers and vendors regarding pricing, quality, delivery schedules, and product availability.
Monitor supplier performance and assist in evaluating and developing reliable supplier partnerships.
Analyze operational data, inventory reports, purchasing trends, and costs to identify areas for improvement.
Ensure compliance with company standards, food safety regulations, sanitation requirements, and workplace safety procedures.
Perform other duties and responsibilities as may be assigned by Management.
Qualifications
Bachelor's degree in Supply Chain Management, Logistics, Business Administration, Accountancy, or a related field.
At least 5 years of relevant experience in Supply Chain Management, with strong experience in food, restaurant, commissary, warehouse, or corporate operations.
Proven experience in commissary, warehouse, procurement, inventory, and logistics management.
Strong knowledge of supply chain principles, procurement strategies, inventory management, warehousing, and distribution operations.
Working knowledge of food production, food safety, quality control, and restaurant supply requirements.
Experience in coordinating with suppliers, vendors, restaurant units, and cross-functional departments.
Strong understanding of cost control, inventory accuracy, wastage reduction, and operational efficiency.
