Steward Supervisor

JOB SUMMARY

The Steward Supervisor is responsible for the supervision of cleaning processes, stock control and hygiene maintenance in all kitchen areas.

RESPONSIBILITIES

Operation

Supervise all stewarding activities:

Kitchen overnight cleaningKitchen floors / wall cleaningKitchen equipment cleaningWashing and sanitizing of all walk in chillers and freezersCleaning and sanitizing of ice machines, shelves, food trolleysSilver, bronze, copper polishingDish washing / maintenance of dishwasherCleaning and maintenance of all kitchen equipmentProper garbage disposal Cleaning of garbage room and receiving bayStock taking (Par Stock)Ensure that the following is implemented to facilitate effective cleaning:Follow procedures according to company standardsProper usage of cleaning agents and quantityUse of correct type of cleaning equipmentOrganize equipment minor and major repairs when required.
Stock ControlControl flow and supply of operating items (chinaware / glassware / silverware / flatware etc.)Conduct quarterly inventoryEnsure cleanliness and orderliness of stewarding stores (affixing labels, etc.)Arrange requisition of par stocks and supplies for stewarding storeroom to ensure sufficient items for operationPeople ManagementObserve staff performance / grooming / punctuality.Ensure that staff are equipped with the proper knowledge and equipment in order for them to work efficiently, train staff when necessary. Enforce discipline and proper behavioral traits to subordinates, maintaining a fair, consistent, and non-prejudicial approach.Monitor and provide feedback on performance of team members and conduct coaching/ counseling.Identify training needs and recommend learning / training opportunities for employees to ensure their continuous professional development.
QUALIFICATIONSCandidate must be at least a high school graduateAt least three (3) years of work experience as a Steward SupervisorExcellent verbal and written communication skillsThorough knowledge of cleaning processes and proper usage of all operating equipmentThorough knowledge of kitchen hygiene and sanitation standards and proceduresExcellent knowledge of fire and life safety standards and proceduresExcellent customer service skillsMust be able to deal with different types of individuals
