Responsible for the management and delivery of all galley and restaurant operations and overall efficient operation of the accommodation areas.

Support SMC's strategic goals:

  • Adhere to proper food handling, sanitation, and safety procedures.
  • Maintain appropriate dating, labeling and rotation of all food items.
  • Determine daily and weekly food requirements for all Galley operations.
  • Order food related provisions, accept deliveries and ensure that all orders are in full and correct.
  • Report quality issues or inventory deficiencies upon receipt of deliverables. Contact suppliers for resolution or reimbursement.
  • Immediately report deficiencies or breakdowns of galley equipment to the MTC Manager.
  • Run efficiently and economically the catering department in line with agreed budgets.
  • Provide a weekly and monthly logbook of food provision orders, inventory, equipment breakdown and expenses to the MTC Manager.
  • Create daily meal menus, in consultation with the MTC Manager.
  • Prepare, cook and serve meals as required by assembling, combining, and cooking ingredients.
  • Provide guidance to staff in galley operations.
  • Proper disposal of catering department's garbage, food waste, used cooking oils and fats.
  • Maintain cleanliness of kitchen appliances, work surfaces, floors, and walls always.
  • Promote high standard of personal hygiene and sanitation.
  • Participate and support the Company throughout the Internal and External Audits of the Galley and Restaurant.
  • Regularly receive feedback from seafarers and implement their suggestions within parameter of position and refer more complex concerns to supervisor.

Requirements

  • College graduate
  • Diploma from a culinary school will be an advantage
  • Proven work experience as a Chief Cook, or any other similar role.
  • Good communication skills with a problem-solving attitude
  • Excellent cooking skills and be able to prepare a variety of dishes, from basic to complex
  • Good computer skills
  • Organizational and time-management skills
  • Can start ASAP and amenable to work onsite at BSM House, Quirino Malate Manila
